Shepards Pie

McCools introduced me to shepards pie (they are a cool Irish restaurant in SLC and Layton) and I thought to myself; wow, it would be easy to make a simple shepards pie at home on a cold night when I don't want to spend a lot of time in the kitchen and I don't want to leave to get food either.

Start out by microwaving about 20 frozen (walmart brand italian style) meatballs for about 5 minutes stirring halfway through. Or you can brown up some ground beef but I personally like meatballs so much better.
Preheat your oven to 375'
Then see what kind of frozen veggies you have in the freezer. I used peas, carrots, and corn about 1 1/2 cups total.
Dump your frozen veggies and meatballs into an 8" x 8" baking pan.
Pour 1 cup of brown gravy on top (one of those packets you can buy make 1 cup, or you can use beef bouillon to make it)
"cook" one packet of the Betty crocker garlic potatoes (or other flavor)  and spread over the top of your beef veggie mix and top it all off with 1/2 cup of shredded cheese.
Bake for 25 minutes.

Talk about making a real good meal out of a bunch of frozen food and packets! My favorite thing about the packets of potatoes or potato spuds is that they don't have a bunch of processes crap in it like other packaged food. When you look at the ingredients it says: potatoes. That's basically it! This dish really is so delicious too, my hubby and I were totally happy to eat it for lunch and second lunch the next day.

Vegetable pie

Vegetable Pie with a Zucchini Crust:
  • 4 zucchini, shredded and patted dry with paper towels
  • 2 eggs
  • 2 1/2 cups of mozzarella, divided
  • 2 tomatoes, diced
  • 1 green pepper, diced
  • 4 oz of mushrooms, sliced
  • 2 green onions, chopped  
  • 2 tsp basil 
  • Dried oregano, to taste

Preheat the oven to 400 degrees. Coat a casserole dish with cooking spray.

After you grate the zucchini, pat it dry with a few paper towels, removing as much moisture as possible.
Combine the zucchini with the eggs and 2 cups of mozzarella. Push the zucchini firmly into the casserole dish, forming a crust. Season with sea salt and freshly cracked pepper, if desired. Bake in the oven for 10 minutes.
After the zucchini has baked, layer the casserole with green pepper, mushrooms, green onions, tomatoes, basil, and finally top it with the remaining 1/2 cup of mozzarella cheese. Sprinkle the top with dried oregano, to taste.
Place into the oven and bake uncovered for 25 minutes. Let cool for 5 minutes before serving. Enjoy.

Quesadillas

Quick. Easy. Had it for dinner Tuesday night.

Tortilla (I've found that wheat Mission brand is good to since we can't find Papa Tortilla at our walmart anymore. I'd avoid the multi grain kind in the future though cuz it's just weird having bits of things in your tortilla)
Shredded cheese - always keep two bags of different kinds in the house, fiesta blend, cheddar, colby and montery jack, change it up keep it fresh)
Pepper and Onions - thaw some frozen pepper and onion mix in the microwave and then put it on
Chicken - Shredded or tear up some pieces to scatter on it
Tortilla
Cook on the stove for a couple minutes each side to give it that delicous crispyness (you can put it in the mircowave for a minute but it's so worth it to put it on the stove) then cut into like 6 pieces

Salsa - to dip it in

You can always go with the classic tortilla and cheese but if you do please promise me you will cook it on the stove.

Nachos

Dinner time again and who wants to actually cook something? No one, so it's time for nacho supreme.

Grab those tortilla chips from the pantry and spread an even layer on a plate.
Top with either cooked chicken or cooked ground beef
Then layer on shredded cheese, diced onion, sour cream, olives, and salsa.
And if you have jalapenos and cilantro dice that up and put it on there too.
Heat it all up in the microwave for 2-3 minutes (until the cheese is melted)

Or to make a big batch heat up the oven to 350 and stack all the ingredients on a foil lined cookie sheet. Bake for about 10 minutes. They are really good this way because the chips stay super crunchy. Sometimes in the microwave it can get a little soft on the chips that have a lot of salsa.
