Banana muffins

Yay muffins! My girl likes to call the chocolate ones happy birthday cakes :) I love that muffins are already portioned and take half as long to cook as a loaf of banana bread. So here are the two versions that I made recently.



Chocolate, Banana  Muffins:
 
  • 1/2 cup of butter, softened
  • 3/4 cup of brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 3 very ripe bananas, mashed up
  • 2 cups of flour
  • 1/4+ cup cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt   
  • cream butter and sugar then add eggs, vanilla, and bananas, mix well. Then mix in the remaining ingredients. Optional you can stir in some chocolate chips (regular or white) for some extra umph. 
  • Preheat the oven to 350 degrees then coat a muffin pan with cooking spray. bake 18-20 minutes. makes 1 dozen


Banana nut muffins 

Ingredients

  • 2 cups all-purpose flour
  • 2/3 cup packed brown sugar
  • 2 teaspoons baking powder
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 2 eggs
  • 1 cup mashed ripe bananas (2 to 3 medium)
  • 3 tablespoons canola oil
  • 1/3 cup chopped walnuts
Preheat the oven to 350 degrees then coat a muffin pan with cooking spray. bake 18-20 minutes. 
Makes 1 dozen
